Seasonal Recipe: Baby Cheesecake with Toffee Pears

Make the crust

As the base for the decadent filling, the crust is an important component of any cake. Make yours by tossing together a scoop of rolled oats, a handful of our chopped mixed nuts, a bit of brown sugar and some melted butter. Then, place a spoonful of the mixture into muffin tins lined with baking cups. Use your fingers to pat down the mixture, and then bake the crust for about eight minutes to set.

Mix up the filling

Now, it’s time to make the filling. Using an electric stand mixer, whip room-temperature cream cheese until it’s smooth and airy. Then, slowly mix in an egg. For something a little unexpected, add an intriguing savory element, like blue cheese, that will complement the pears. Finish by adding even more creaminess with a scoop of sour cream. Spoon the blue cheese-tinged cheesecake mixture on top of your prepared crust and bake until just slightly puffy.

Time for the topping

To make the toffee pears, start by melting a dab of butter before mixing in brown sugar and cream. While continuously stirring, cook the sweet mixture until it begins to bubble. When it reaches the point of bubbling, add some sliced Red and Green D’Anjou Pears. Lastly, cook the pears until tender and then remove from the heat before adding a dash of vanilla.

Making some fruity desserts is a delicious way to celebrate all of the fresh things growing around us this spring. By combining dried fruit, jam and just a little hint of chocolate, you can whip up one of our favorite spring recipes — delicious Dried Fruit Thumbprint cookies — to enjoy with your friends and family!

Making your marbleized dough

The base of these flaky cookies is made with two different flavors of dough — one chocolate and the other vanilla. Both contain essentially the same ingredients, including flour, salt, sugar, butter, eggs and vanilla. However, to make your chocolate dough nice and rich, mix in a heaping scoop of unsweetened cocoa powder.

To marbleize or mix the batches of dough together, start by rolling both into ropes that are about a half-inch wide. Then, form the base of your cookies by pinching off a piece of each rope and rolling it together to form one chocolate and vanilla swirled ball. Finish by holding your dough and using your thumb to press a small well into the center of each cookie before refrigerating for half an hour.

Adding the final touches

After your cookies have had the chance to firm up a bit, it’s time to throw them in the oven for a few minutes. While they’re baking, start mixing up your fruit and jam filling. For the right ratio of fruit, simply combine one cup of dried and chopped fruit with one tablespoon of jam.

The type of fruit and jam flavor you pick is entirely up to you. Start by preparing the base

Using a food processor, throw in a handful of your cashews, an equal amount of raw almonds and about 20 Medjool dates, making sure to remove the pits. Pulse the ingredients until you have a nice chop and everything is well mixed. To maintain a good texture, make sure you don’t pulse too much.

After your mixture has reached the perfect consistency, add it to your baking dish and push down to spread the fruits and nuts evenly. Then, simply place the base in the freezer.

Make the fluffy whipped topping

To add a burst of cashew flavor, you can incorporate more cashews into the topping. Start by soaking a couple cups of cashews in water for two hours. Then, rinse and drain the nuts. Place the soaked cashews in the food processor, along with lemon zest and lemon juice. To add a hint of the tropics, mix in a bit of coconut nectar and coconut oil. Finish with a vanilla bean flesh and process until smooth. Once you have a nice, fluffy consistency, stir in a can of coconut cream and process again until the mixture is super creamy.

Now that you have your silky topping prepared, simply pour it over the base and place the whole thing in the refrigerator. Let your bars cool overnight, allowing them to solidify a bit. When you’re ready to serve, just cut your bars into squares and top with a little sprinkle of chopped cashews.
