Seasonal Recipe: Grilled Sausage with Fruit Relish and Curried Walnut Couscous

Pairing fresh, juicy fruit with bold gourmet sausage is an unexpected and delicious combination. You can even add a side of curried walnut couscous for greater textural complexity. Fantastically sweet and savory, grilled sausage with fruit relish and curried walnut couscous is a recipe that works well for everything from a summer cookout to a winter treat that transports you to the tropics.


Preparing your Fruit Relish

Start making your sweet relish by chopping up some fruit. For a delicious treat, pick dried mangoes, apricots, and sun plums from our Dried Fruit Collection. If you prefer fresh fruits, choose juicy Crown Comice pears, Fuji apples and Mandarin oranges. Remove the seeds and stems before dicing into small pieces, then place your fruit in a bowl. Finish your relish with a splash of white balsamic vinegar and a sprinkle of kosher salt.


Cooking the Sausage

Make some Chicken Salad with Grains and Pistachios for a twist on a classic dish. Shred the meat from broiled chicken breasts and toss with cooked grains like quinoa, barley, farro or rice, along with some savory garden herbs. Add a few shallots and some chopped up pistachios, and then top with light vinaigrette. You can also grill the chicken breasts, but remember to remove the skin to keep it healthy.
