Polenta with Eggs and Zucchini
Start your day off the right way with a delicious, gluten-free breakfast. Try making your own polenta by bringing a mix of milk and chicken broth to a boil before whisking in corn meal and allowing the mixture to thicken. Prior to removing it from the heat, shred a handful of our Farmhouse Cheddar Blend into the pan, and stir until melted and gooey.
In another skillet, start sautéing a mixture of zucchini, onions and rehydrated dried tomatoes, while poaching your eggs in a separate skillet. After you’re done cooking, start building a yummy breakfast by layering the polenta in a bowl with the veggies and eggs on top.
Roasted Cabbage and Apples with Sausage
With just the right amount of sweet and savory, cabbage and sausage is a classic combination. Start by roasting chopped cabbage with a bit of vinegar, thyme, onion and a diced apple until the mixture is soft and wilted.
For a simple, yet nutrient packed gluten-free dish, whip up these easy stuffed tomatoes. Start by cooking a few cups of quinoa, and then tossing in some green chilies, corn, a handful of our mixed nuts and a gracious amount of our Smoked Pepper Jack cheese. Then, simply stuff the mixture into a core-less and seedless tomato, and bake until it’s soft and the cheese is a nice golden brown.
With tons of vitamins and minerals, sweet potatoes make a fantastic side. Simply slice the potatoes and roast. After you’re done, top the potatoes with our chopped Holiday Spiced Almonds and a bit of our Smoked Blue Cheese.
