Oatmeal Dried Fruit Cookies

Add some extra flavor to traditional oatmeal cookies with the addition of some dried fruit. If your mixture of oats, butter, egg, vanilla is too dry, add a splash of some almond milk to the mix. Bake the batter on an ungreased cookie sheet for approximately 10 minutes in an oven preheated to 375°. Let them cool on the cookie sheet for five minutes before transferring to a wire rack.

Cashew Cookies

Start by toasting equal amounts of rolled oats and our mixed nuts on a baking tray until you can smell a nice, nutty fragrance. Then, throw the toasted mixture into a large bowl and add a bit of puffed cereal, flour, salt and a heaping handful of our dried apricots.

Using a food processor or blender, puree tofu, honey, vanilla, egg and, for added tang, a bit of lemon zest. Combine the tofu mixture with your mixed nuts and apricots, folding everything together with a spatula. Finish by spreading the mixture into a pan and baking.
