We love to celebrate at Hickory Farms, and we’re currently gearing up for National Pistachio Day on Feb. 26. This day is dedicated to celebrating a great-tasting and healthy nut! It originated in the Middle East, and has become a favorite of many Americans. People living Middle East call them “smiling nuts” for the way the hull splits open and looks like a grin when they’re ripe.

Pistachio Shortbread is a tasty treat you can make to brighten up a wintry day. Simply add pureed pistachios to basic shortbread ingredients like flour, vanilla, sugar, salt and butter. Afterwards, just bake! After cooling, serve with or without a dollop of fruity jam on top. Mmm mmm good! And at only 70 calories a serving, it’s good for your waistline too.
Make some Chicken Salad with Grains and Pistachios for a twist on a classic dish. Shred the meat from broiled chicken breasts and toss with cooked grains like quinoa, barley, farro or rice, along with some savory garden herbs. Add a few shallots and some chopped up pistachios, and then top with light vinaigrette. You can also grill the chicken breasts, but remember to remove the skin to keep it healthy.
This Poached Pear Tart with Caramelized Pistachios is a decadent treat you can make by poaching pears from our Hickory Farms Crown Comice Pear Gift Basket with a fruity red wine like Zinfandel and some orange and lemon zest. Add pistachios to a pastry cream mix, then add more nuts, sugar and water over high heat to make a caramel syrup to pour over your crust. Delicious!
